This has been a great week so far, lots of sleep, training is going well, the Canadian Blogger Series launched, and I got new sneakers! What more could a girl ask for? Plus it’s Wednesday, which means were half-way through the week and it’s WIAW, that’s reason enough to be thankful.
Today was my vegetarian day, I thought it would be interesting to share a veggie day during a WIAW. I started my day with an egg white sandwich with tomato and OJ. It was a great start to the day!
For lunch I had a tuna sandwich and some leftover lentil soup. Not exciting enough to photograph! For dessert with lunch I had a strawberry Greek yogurt. Before I headed to my first ever spinning class (more on that later this week) I had a chocolate almond fudge Cliff Bar.
For dinner I had Mama Pea’s black bean soup and bruschetta. Both were really good, Mama Pea makes eating vegetarian easy! I have had bruschetta 2 nights in a row now, it’s soooo delish. I marinate grape tomatoes in olive oil, balsamic vinegar, basil, garlic, salt, and pepper. then top with mozzarella and bake on 400 for 15 minutes. Not really a recipe but I thought I’d share.

What’s the best thing you ate today?
I’d be lying if I said I wasn’t sitting here drinking a glass of wine in front of the fireplace. I wasn’t going to blog tonight because I just spent a very long 12 hours at work, in meetings the entire time. I love my job and I love my team, I am not complaining, but I am so unbelievably tired. I have never been so glad to have fit my workout in this morning at 6:30am because it wouldn’t have happened otherwise. I had a feeling it would be a long day so I fit it in because that’s what you do when your training for your first half-marathon….you fit it in.
I ate take-out in a meeting room three times today…I’m glad I fit it in! Right now I am craving a little comfort so soon as this posts I am curling up and reading Game of Thrones. While I will not be cooking this after what I ate today, I think you should forget the laundry, the to-do list, twitter, and life and make this mac n’ cheese. Then curl up and read a good book if you are having one of those days. Sometimes you just gotta fit it in!
Almost Non-Dairy Mac N’ Cheese
- 4 cups whole wheat small pasta (I used penne)
- 1 cup light cheddar cheese
- 1 tbsp margarine or butter
- 1/4 tsp dry mustard
- 1 cup soy milk
- 1 tbsp flour
- 1/2 cup cherry tomatoes chopped
- Salt and pepper to taste.
Bring water to a boil and add pasta. Melt the margarine on medium low heat and then slowly add the flour while cooking until fully incorporated and there are no lumps! Allow to cook for an additional 2 to 3 minutes until it starts to turn an amber/caramel colour. Add in soy milk and continue to stir and cook 3 to 4 minutes until sauce has thickened. Add in cheese and dry mustard and cook an additional 2 to 3 minutes, constantly stirring. I am lactose-intolerant but I can have small amounts of real cheese, if you want this to be totally dairy-free you can swap in a lactose-free cheese. The sauce takes a total of 10 minutes to cook and pasta is generally around 12 so start the sauce 2 minutes after the pasta and they will be done the same time. Drain the pasta and add the sauce and tomatoes to the pasta and toss to coat. Season with salt and pepper and enjoy! I actually made this Monday which was also my vegetarian day this week, meatless Monday! (Serves 4)

I first want to show you the torture I went through today at Costco on my lunch break. Apparently everyone has quit their job and they just go shopping every day, specifically at Costco.
It was a madhouse today, people were in such a rush and most of them very rude. Remember the purpose of Christmas is to spread joy, kindness, and to let me get my groceries in peace. Want a peak in my basket? Yes those are chicken fingers. I make sure to always have something quick on hand when I need something on the run to avoid takeout and these ones are the best kind made with actual chicken breast. Other then that in my basket is Greek yogurt (2 kinds), roasted red pepper hummus, chicken breasts, chicken wings, bell peppers, bananas, margarine, cliff bars, coffee, parchment paper, paper towel, and aluminum foil. I stocked up because after today Costco will not be seeing me until January.
So as an update on last week it went really well. I became involved in What I Ate Wednesday and it was a great addition to my involvement in the blog community. I loved reading everyone’s posts and seeing comments from those that read mine. I received a ton of traffic because of it and it really helped me feel like even more part of the community so it was a success. If anyone has any other suggestions for blog marketing / networking or has written any posts on it please let me know! I have something else in the works as well that hopefully I will share with you soon.
Monday Tuesday Mantra: Go Veggie For A Day
I have always wanted to challenge my eating habits by going vegetarian for a week. I think that’s probably a little too much to take on right now so I will commit to trying it out for a day and reporting back not only what I eat but how I felt and how my workout went. My inspiration for this Mantra was from A Dash of Meg’s Meatless Monday, her meatless meals always look so delish! I am thinking I will try it out either Thursday or Monday. Just as a side note I don’t think I will ever go fully vegetarian, just wanted to try challenging my eating habits, who couldn’t use more fruits and veggies in their diet!
