How is everyone enjoying their weekend so far? We had a storm today but it wasn’t near as bad as forecasted. I still didn’t leave the house all day though! I got a lot accomplished which I am happy about. Lots of cleaning, organizing, baking, and relaxing! It was a great snow day!
It’s the time of year when snow days happen more often then not here in Canada. A while ago on one of my what I ate Wednesday posts I posted chicken enchiladas that I made with salsa chicken and I promised I’d share the recipe, I figured now was as good a time as any. This recipe will keep you hot when the weather is cold.
Crockpot Salsa Chicken
- 1 can tomato sauce
- 1 cup spicy salsa
- 1 package taco seasoning OR use my homemade taco seasoning recipe below
- 4 boneless skinless chicken breasts
Homemade Taco Seasoning
- 1.5 tbsp chilli powder
- 1.5 tbsp cumin
- 1/2 tbsp onion powder
- 1/2 tbsp garlic powder
- 1/4 tsp cayenne pepper
- salt and pepper to taste
Combine the first 3 ingredients and pour over chicken in crockpot. Combine the spices before hand if making your own taco seasoning. Cook on low 8 – 10 hours then shred chicken and mix thoroughly with sauce. You can use this chicken to make tacos, enchiladas, or even Mexican pizza below! After making my standard dough I added cheddar cheese, peppers, and tomatoes to make the pizza!

So this week has been crazzzzzy, and continues to get crazy. I have been non-stop and when I headed to the gym tonight I had my whole night planned out after, I left and when I got to the parking lot of Goodlife my tire was flat. In that moment I was not feeling the good life. I was feeling miserable stood in the dark and rain, starving and wanted to go home! So after Bruce arrived to rescue me we got take out and came home and my whole night was thrown off. Story of my life oh poor me. haha
So anyways though I didn’t update my Monday Mantra this week it went really well. I have been doing well with doing a few things here and there and the house doesn’t look like a total disorganized disaster area so that’s a success in my opinion. I have been trying my best to get better at time management when it comes to my life, I’m great at it at work but not so much at home. I guess because you can only plan every second of your day so much until you hit the breaking point and need to just lay around and relax. I’m getting better at finding balance everyday!
Monday Mantra: Get Cookin’
I have started this one already this week, seeing that it’s Thursday, and it’s going great! I wanted to get back to what first drew me to blogging, my love of cooking. Lately I have been finding myself pulling together the laziest dinners ever, soup and sandwich, omelettes, and whatever I can put my hands on quickest. So this week I am getting back in the kitchen and getting back to what I love! I have a couple recipes to share already including this one for buffalo chicken pizza, I love love love pizza so here is another one of my creations!
Buffalo Chicken Pizza (serves 3 or 4)
- Basic dough recipe
- 2 cooked chicken breasts
- 1/2 cup frank’s buffalo sauce
- 1/4 cup ranch dressing
- 1 bell pepper
- 2 tbsp bacon crumble
- 2 cups light cheddar cheese
- 1 cup fresh mushrooms
Make dough according to recipe. Mix buffalo sauce and ranch dressing and spread over dough. Toss chicken in remaining sauce to coat. Top with veggies, bacon, and cheese plus any other toppings you desire! Bake 15 – 20 minutes on 375 degrees.

The weather in my neck of the woods has not been good. When I say not been good I mean rain, drizzle, and fog …. constantly. I actually could barely see the parking lot from the office today because of the fog. This is what it looked like on my run yesterday:
It’s downright depressing, it’s August after all. The rest of Canada is seeing heat waves and record high temps. I wish they’d send them our way for a while. I’ve stopped planning any form of barbeque into my meal plans because the weather just refuses to cooperate. So as a last ditch attempt to pretend it’s summer I’ve decided to bring the flavours of barbequing inside.
BBQ Chicken Pizza (serves 4)
- Homemade (see below for my recipe) or premade frozen or fresh crust
- 2 cooked and chopped chicken breasts
- 1/2 cup favourite bbq sauce (divided)
- 8 or 9 grape tomatoes chopped
- 1 green pepper chopped
- 4 mushrooms chopped
- 2 cups mozzarella cheese (I used light)
Preheat oven to 350 degrees. Spread half the sauce on the crust and use the rest to toss the chicken in. Top crust with chicken, tomatoes, peppers, mushrooms, and cheese. Bake for 20 minutes or so until cheese is bubbly and golden brown. You could really add any veggies you like to this!
Homemade Pizza Dough (Makes 1 pizza enough for 4 people)
- 1 tsp sugar
- 1 tsp salt
- 2.25 teaspoons quick rise yeast (also known as bread machine yeast)
- 1 cup whole wheat flour
- 1 cup white flour (or you can use all white or all whole wheat)
- 3/4 cup hot water
- 2 tbsp olive oil
Mix water, sugar, and yeast and allow to sit for 10 minutes until yeast is foamy and bubbly looking on top of water. Add everything else and knead by hand or my personal lazy method by dough hook on a stand mixer for 5 minutes. Allow to rise for at least 20 minutes, roll out dough on a floured surface, and top with desired toppings! It’s better if you allow for a longer rise but if you are short on time 20 minutes is enough time. That’s what quick rise yeast is for! This is my go to dough recipe. We eat a lot of homemade pizza around here, I’ll eventually share all my topping combinations!
Fun fact: this picture was shot out in the drizzle and fog on my deck. I wanted natural light so I braved the elements! I’m off to check on the progress of the renovation of my office and hopefully curl up under a blanket and watch a movie because it’s Fall here apparently.
